Every back includes the tail, a rich, fatty morsel that turns crisp and delicious when dry roasted or fried. Cooks who know it consider it the best bite on the bird. The backs also carry generous amounts of goose skin, which renders into golden schmaltz at a much lower cost than buying fat or skin outright. Render it slowly for schmaltz and crisp gribenes. Once you’ve trimmed away the skin and fat, the bones are ready for the stockpot and make a rich, collagen-filled goose stock.
