They come from slow-grown, pasture-raised Embden geese and are made for the stockpot. Simmered gently, they release a lot of natural collagen and a deep, savory flavor. The result is a dark, aromatic stock with a silky body that sets to a firm jelly when chilled.
Use them as the base for soups, gravies, sauces, reductions, and braises. Goose stock has a bold, distinctive character all its own, and it gives any dish real depth.
