When it comes to poultry, age brings flavor. Processed at a minimum of one year of age, our Heritage Stew Fowl develop a depth and complexity rarely encountered in modern chicken. Years of movement and maturity produce dark meat with a deep burgundy hue, generous layers of velvety yellow fat, and skin that ranges in color from soft butter yellow to a deep marigold. Together, these qualities create a richness that can only be achieved with time.

Unlike young broilers, Stew Fowl require long, moist cooking—typically four to eight hours—to fully reveal their exceptional qualities. While they may produce the finest chicken soup you have ever tasted, they are not intended for grilling, barbecuing, or dry roasting. These are birds for the stockpot, the braising pan, and the slow traditions of the kitchen.

Cooking Instructions: Our stew fowl are perfect for crafting extraordinary dishes such as a rich, hearty chicken soup, Coq Au Vin, or a deeply flavorful chicken chullent/hamin like you’ve never experienced. Braising works wonderfully, provided the pot is kept tightly covered throughout the cooking process.
