Originally developed in England in the 1940s as a premium farm duck, the Silver Appleyard has long been prized for its exceptional eating quality.
Unlike industrial Pekin ducks*, which are bred for rapid growth, the Silver Appleyard grows at nearly half the rate. This slow growth allows the meat to develop a deeper color, fuller texture, and a rich, luxurious duck flavor that won't disappoint. Yet while it grows slowly, it is still harvested young — at just around 12 weeks — delivering the best of both worlds: the depth and character of a traditional, slow-grown bird with the tenderness today’s cooks favor.
Expect succulent, beautifully balanced dark meat and a generous layer of clean, abundant fat that renders effortlessly — producing crisp, lacquered skin and leaving plenty of liquid gold for roasting potatoes, enriching vegetables, or saving for future cooking.
